Millionaire's Shortbread - The Healthy Version


 I have run out of steam. It's too hot to do anything. 

So I'm posting a recipe I have been experimenting with - partly based on one in The Happy Pear -book two. I find the Flynn twins totally inspiring.

It's really a health version of Millionaire's Shortbread....

Salted Caramel No Cook Date and Nut Chocolate Tart.



For The Base 

250g roasted nuts - eg  almonds, walnuts. cashews.
25g Goji berries.
100g coconut oil
1 Tbs vanilla extract.

For The Filling 

300g dates - dried or soft
150g almond butter
100g coconut oil
2 tsps vanilla extract
5-10 Tbsp of water
several scrunches of sea salt.

For The Topping 

100 g each dark, milk and white chocolate
or any combination you like.


Method

Roast the nuts and grind together with the goji berries and coconut oil in a food processor till you have a crunchy paste.

Line the base of a square baking tin with greaseproof paper and spread out the mixture on the base. Put in the fridge to harden up.

If the dates are hard cook them in a little water to soften them and then whizz them up in the food processor with the nut butter, vanilla extract, water and salt.
Spread over the nut base.

Melt the different chocolates in bowls over boiling water. Spoon them over  the caramel date layer in a random pattern and then swirl around with the back of a knife without blending together too much.

Put back in the fridge.

When you cut it into slices the chocolate top will crack but higgled piggledy slices are fine.

Keep in the fridge when not eating. Which may not be for very long.
